{"id":68,"date":"2011-06-20T13:51:22","date_gmt":"2011-06-20T17:51:22","guid":{"rendered":"https:\/\/frogfood.peace.net\/?p=68"},"modified":"2011-08-02T20:37:06","modified_gmt":"2011-08-03T00:37:06","slug":"stuffed-shells","status":"publish","type":"post","link":"https:\/\/frogfood.peace.net\/index.php\/2011\/06\/20\/stuffed-shells\/","title":{"rendered":"Stuffed Shells"},"content":{"rendered":"<p>Is the food blog back?\u00a0 We&#8217;ll see, but for now, here&#8217;s something: my first ever stuffed shells!\u00a0 I&#8217;ve been wanting to make these for a while and finally assembled all the ingredients.\u00a0 The roasted tomato awesomesauce was part of the large quantity I put by in the freezer last summer, the chard was from the first farm share pickup of the season, and the basil came from the porch garden.<\/p>\n<p>As it often my way, I looked at an assortment of recipes and combined them into something I thought would work.\u00a0 The &#8220;ricotta&#8221; is mostly a cross between two different recipes in Veganomicon.\u00a0 My original plan was to mix in spinach, but since I had the chard, used that.\u00a0 Good thing, too, because without it, I would have been pretty short on stuffing, so definitely pick a green, or if you can&#8217;t stand the idea of vegetables mixed in, make extra ricotta.\u00a0 You could also modify this recipe slightly for lasagna, which would maybe be a little less fancy but also save the stuffing time, though you&#8217;d have a higher pasta ratio.<\/p>\n<p>The end result was quite delicious and I would definitely like to make this again.\u00a0 Leftovers have been fantastic.\u00a0 Even with the work of stuffing the shells, it was still pretty fast, and the most time-consuming part was our friend M. (who is a wonderful person, but a little slow in the kitchen) tearing and washing the chard.\u00a0 But if you use frozen greens, this is *really* fast.<\/p>\n<figure id=\"attachment_65\" aria-describedby=\"caption-attachment-65\" style=\"width: 540px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/frogfood.peace.net\/wp-content\/uploads\/2011\/06\/stuffed-shells-done.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-65 \" style=\"border: 1px solid black;\" title=\"stuffed-shells-done\" src=\"https:\/\/frogfood.peace.net\/wp-content\/uploads\/2011\/06\/stuffed-shells-done.jpg\" alt=\"\" width=\"540\" height=\"359\" \/><\/a><figcaption id=\"caption-attachment-65\" class=\"wp-caption-text\">Fresh out of the oven!<\/figcaption><\/figure>\n<p style=\"text-align: left;\"><!--more--><br \/>\n<strong>Stuffed Shells<\/strong><\/p>\n<p><em>for the stuffing<\/em><\/p>\n<ul>\n<li>1\/2 cup raw cashews<\/li>\n<li>1\/4 cup lemon juice<\/li>\n<li>1\/4 cup nutritional yeast<\/li>\n<li>2 cloves garlic<\/li>\n<li>2 Tbsp olive oil<\/li>\n<li>1.5 tsp salt<\/li>\n<li>1 lb extra firm tofu, excess liquid pressed out<\/li>\n<li>handful basil leaves, chopped<\/li>\n<li>cooked, chopped, drained chard (or thawed, chopped, and drained package of frozen spinach)<\/li>\n<\/ul>\n<p><em>for the chard<\/em><\/p>\n<ul>\n<li>2 bunches chard or spinach or similar leafy green, rinsed and chopped\/torn into bite-sized pieces<\/li>\n<li>2 cloves garlic, chopped<\/li>\n<li>olive oil<\/li>\n<\/ul>\n<p><em>and<\/em><\/p>\n<ul>\n<li>1 box giant pasta shells<\/li>\n<li>1 quart tomato sauce (perhaps I will someday post my recipe, but you can use store-bought, too)<\/li>\n<\/ul>\n<p><em>Do this<\/em><\/p>\n<ol>\n<li>Cook the shells according to package directions in well-salted water.\u00a0 Drain and rinse in cool water.<\/li>\n<li>Cook the chard: Saute garlic in olive oil over medium heat for a couple of minutes, then add chard, sprinkle with a little salt, and cover.\u00a0 Stir as needed and when chard is darkened and cooked through, uncover to cook off excess liquid and\/or squeeze it out.<\/li>\n<li>Blend the first six stuffing ingredients thoroughly and transfer to bowl.\u00a0 Crumble in tofu and mix well to ricotta-like texture.\u00a0 Stir in the basil and chard and keep mixing until the greens are all through.<\/li>\n<li>Cover the bottom of a 9&#215;13 baking pan with ~1\/3 of the sauce, then fill the shells (I used a regular spoon) and line them up in the pan.\u00a0 This recipe was just right to stuff enough shells to fill the pan, though I had a bunch of empty shells left over.\u00a0 Maybe they give you extra to account for breakage?\u00a0 I dunno.\u00a0 Pour the rest of the sauce over the top.<\/li>\n<li>Bake at 350 for 35 minutes.<\/li>\n<\/ol>\n<figure id=\"attachment_67\" aria-describedby=\"caption-attachment-67\" style=\"width: 540px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/frogfood.peace.net\/wp-content\/uploads\/2011\/06\/stuffed-shells-before.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-67\" style=\"border: 1px solid black;\" title=\"stuffed-shells-before\" src=\"https:\/\/frogfood.peace.net\/wp-content\/uploads\/2011\/06\/stuffed-shells-before.jpg\" alt=\"\" width=\"540\" height=\"360\" \/><\/a><figcaption id=\"caption-attachment-67\" class=\"wp-caption-text\">All stuffed and ready to be sauced<\/figcaption><\/figure>\n<p style=\"text-align: center;\">\n","protected":false},"excerpt":{"rendered":"<p>Is the food blog back?\u00a0 We&#8217;ll see, but for now, here&#8217;s something: my first ever stuffed shells!\u00a0 I&#8217;ve been wanting to make these for a while and finally assembled all the ingredients.\u00a0 The roasted tomato awesomesauce was part of the large quantity I put by in the freezer last summer, the chard was from the &hellip;
